Today I baked white chocoalte macademia nut cookies.

I baked Sundried Tomato Bread at the weekend, I made the recipe up. I don't often make it by hand, as it's hard on the wrists, but I enjoyed the results.


Bread with sundried tomatoes

Makes 4×10cm Terracotta flower pots
Prep Time 30 mins plus 1hr 30mins standing time
Cooking Time 35 mins
Ingredients

* 300g Strong white bread flour
* 160ml Tepid water
* 50g Butter, chopped into small pieces, plus a little for brushing
* 5g Salt
* 3g Sugar
* 7g Dried active yeast (see Cook's tips)
* Few chopped Sun dried tomatoes in olive oil with Italian herbs
* 2 Tsp Parmesan cheese, grated

Method

* Prepare the pots first
* Line the pots with greased parchment paper, put to one side
* Sift flour into a large bowl
* Add butter, rub into flour until mixture resembles fine breadcrumbs
* Add sugar, salt and yeast mixture, slowly pour in the tepid water and mix well
* Tip onto a floured surface and knead for 10 mins, until smooth and elastic
* Drain the sun dried tomatoes and work into the dough
* Place in a bowl and cover with lightly oiled clingfilm and leave in a warm place for about an hour to rise
* Tip the dough out onto a lightly floured surface and knead well
* Place back in the bowl and cover, again leave the dough for 30 minutes to rise
* Cut the dough into 4 equal pieces
* Place one piece in each pot
* Brush the top of the bread with a little melted butter
* Sprinkle a little Parmesan cheese over the top
* Bake in a preheated oven 200°C/400°F, gas mark 6 for 35 minutes

Topping

* Parmesan cheese

Cook's tips

* To activate the yeast, you need 3g sugar, 60ml tepid water, dissolve the sugar in the water, and sprinkle the yeast on top, then whisk in. Cover with a damp tea towel and leave for 10-15 mins. whisk before adding to flour

Equipment

* 4×10cm Terracotta flower pots
* Large mixing bowl

Shopping List

* 300g Strong white bread flour
* 75g Butter
* 5g Salt
* 3g Sugar
* 7g Dried active yeast
* Sun dried tomatoes in olive oil with Italian herbs
* Parmesan cheese

I'm about to bake some Oatmeal-Raisin Cookies.

Yesterday, I made some, but the dough was too dry and hard, which also made the cookies too dry and hard - like friggen BRICKS!! How embarrassing?!!! I should have KNOWN that something was wrong when I saw the outcome of the dough!!!!!!!!!

So today, I modified the recipe a little bit by adding a third egg, a little bit of shortening for moistness and tenderness and far less oatmel. The dough is softer this time around, and it does NOT appear to be dry at all, so I think THIS batch will be much better!

I'll do a dry run on one, just to see. If that one comes out right, and I think it will, then the rest should be good.

I just made a 100% Whole Wheat recipe for the first time yesterday, and it came out with a nice soft crumb and light texture. Not heavy like a lot of whole wheat recipes. The recipe is on my website as well.

I made Indian Roti bread today for the first time. I have eaten Roti before, but did not realize how easy it was to make. Click Here (http://www.manjulaskitchen.com/2007/03/21/roti-chapati-flat-indian-bread/) for the link to how to make these, but don't make them from the verbal instructions, because the directions are wrong. She says to use 1/2 C of flour and 1/2 C of water, but if you do that it will be flour soup. The water should be 1/2 of the amount of the flour like the written instructions below the video. Enjoy!

I actually baked these last night, but didn't get around to taking pics until this morning. When I got up I saw that half of the cookies were gone, as well as a few Hot Cross Buns. Obviously they went home with my daughter. She was still hanging around talking to her mother when I went to bed at 11 p.m.. Oh, well, that's why I bake.

We were running low on sandwich rolls for the freezer, so I made up a batch. The buns are each made with 3 oz. of dough. Also made a couple loaves of Italian bread, but have not uploaded the pic from the camera.

We are having the neighbors over for a Memorial Day cookout, so I made a batch of Honey Whole Wheat hot dog and hamburger rolls (http://flyfishohio.us/Butter%20Top%20Honey%20Whole%20Wheat%20Bread.htm), as well as some Italian bread (http://flyfishohio.us/JoesItalianBread.htm) in loaf pans for us. I slice it and put it in the freezer, and it keeps well.

Last night I made English Muffins for the first time, using Alton Brown's recipe (http://www.foodnetwork.com/recipes/alton-brown/english-muffins-recipe/index.html). The flavor was great but I need to get the proper baking rings to make these. I used tuna cans with the bottom cut out.

How about 27 dozen cookies in the last week for my daughter's wedding on July 25th? Here is my production line I had set up using all three of my 3/4 sheet pans. I pre-froze the cookies before bagging them for the freezer, and this eliminated any damage to the cookies while they were soft and warm. Plus, this kept them from sticking together. I got 3 dozen cookies in a 1-gallon ziplock bag.

These will all be packaged on Thursday into cellophane bags, then tied with a purple ribbon and hang tag with the names of the bride and groom and teh wedding date. Each place setting will alternate yellow then chocolate, with two cookies in each bag. I made Oatmeal Raisin (http://flyfishohio.us/Oatmeal%20Raisin%20Cake%20Cookies.htm) and Double Chocolate Chewies (http://flyfishohio.us/Double%20Chocolate%20Pecan%20Crunchies.htm), which are my daughter's favorite cookies that I make.

BTW, they were all portioned out using a size 30 disher (http://www.ckitchen.com/commercial/smallware/dishers/adcrat-ics-30-ice-cream-disher.html) so they would all be the same size (3-1/4" dia.). They are big, which is why I only got 15 cookies to a sheet.

Here's an update on those English Muffins from 3 weeks ago. I got my rings in the mail and actually made the muffins in fish camp on a Coleman stove with a griddle top. Along with some Canadian Bacon and poached eggs, I made the guys Eggs Benedict for breakfast one morning before we went fishing. One of the guys who also a foodie, made the Hollandaise Sauce.

How do you get such nice even slices? Do you have a great technique or some kind of guide? I may start making all of my bread too if I could slice it like that!

Made this yesterday, for my brother in-law's birthday, he is a peanut butter fanatic. I made the Hershey's Perfectly Chocolate Cake (great recipe) and split the layers to make 4 nice thin layers and filled and covered with peanut butter buttercream, chopped up some peanut butter cups and put them on top and drizzled with ganache.

The trick was transporting 2 1/2 hours and keeping it cool outside until dinner, my trusty coleman cooler did a good job!

With the Labor Day holiday behind me, I can now post what I baked lately. For a party at my brother's house on Sunday, I made a batch of Oatmeal Raspberry Bars (http://flyfishohio.us/Oatmeal%20Raspberry%20Bar%20Cookies%20.htm) that disappeared in a heartbeat. I must admit they were delicious.

Today, I just made a bourbon-flavored sweet potato pie filling for three pies to be baked in the morning.

One is for a friend down the street, the other two are for a birthday party over the weekend. Thay want to try my sweet potato pie, so I'm making three of them.

I made a cake for my partner's grandma's 96th birthday. I didn't plan very well, and realized that I didn't have enough disposable pastry bags, so I had to use some ziploc bags as makeshift pastry bags, not as easy to work with, add to that I lost my leaf tip, and well we just have a makeshift cake.

The cake is a 1/2 sheet chocolate cake, split in half and filled with a whipped chocolate ganache, and finished with a chocolate butter cream.

I use Pyrex glass pans for the cinnamon rolls because we have so many of them, plain and simple. Been married for 37 years, and we accumulated them before the fancy coated pans were available. In fact, we don't even own any teflon baking pans. I spray the Pyrex with cooking spray before putting the rolls in them, and they come out easily and the dish cleans easily as well.

I didn't bake anything today, but me and the wife went for a drive out to Amish country, and stopped at the bulk foods store. Picked up some bread flour that should carry me through the holidays...maybe!

Wow, I made an apple crisp from the Joy of Cooking cookbook yesterday.

It was delicious!

First time trying that recipe. I normally make the crisp with oats but this recipe didn't call for any, which I didn't notice until I was putting it in the oven, DUH!

So, I thought I wasn't going to like it.

Loved it!

Today I made expatCanuck's Banana Bread that he posted on the easiest baking recipe forum (http://www.cookingforums.net/showthread.php?t=606&page=2). It turned out good but I think I would add at least one more banana to the recipe. Didn't quite have enough of a banana flavor to it.

Looks good and delish though!

I think I'm going to be doing some heavy baking come the holiday season. I've been invited to several parties and I'm going to bring something baked, such as pies or cakes.

Incidently, the bourbon sweet potato pies that I made two weeks ago were a big hit! Got rave reviews and the get-together that a friend and myself attended, the party goers all LOVED it!! They want me to make some more!!

But when we go back there in December, I think I'll dazzle them with my famous 7-Up Cake!

Thank you. Frank lived for 87 years and made a positive impact on a lot of lives. Never heard him speak ill of anyone. A very special guy who will be missed by all.

baking today won't happen but I did make a batch of luscious gingersnaps yesterday.
it's the second batch I've made in a few days, guess I'm on a gingersnap junket.
the first batch was wonderful, all dark brown sugar, very crisp, very dense in flavor, very very good.
yesterday's batch was completely different recipe that called for much more ginger so I halved it and did 1/2 powdered and a lot of that, plus 1/2 again of grated fresh, plus added black pepper and nutmeg and cloves which it didn't call for. Half white and half brown sugar. They are really good but burned easily, wonder why. Very good cookies, the husband says so as does our pooch:eek: No, no chocolate in them for the concerned.....................:p

I didn't bake anything today, but me and the wife went for a drive out to Amish country, and stopped at the bulk foods store. Picked up some bread flour that should carry me through the holidays...maybe!

Prepare yourself for a serious road trip as I bought this at B&R Bulk Foods in Middlefield, Ohio, about 30 miles SE of Cleveland. The bag cost $19 for 50#, compared to the $14.50 I was paying for 25# at the local Giant Eagle grocery store. This also goes under the name of Montana Sapphire, but I believe the distribution is somewhat regional. Contact your grocer and see if it is available from his distributor. Sapphire got its name from the blue skies of Montana where the brand originated, and it is made with hard winter wheat, is unbleached and has a protein content of 10% which makes it excellent for bread baking. Yes, it really does matter what flour you use to bake bread if you expect to get predictable and repeatable results. Remember, bread is made using formulas, not recipes as is erroneously stated. Formulas guarantee predictable results, recipes get you close with somewhat predictable results.

As far as picture clarity, I use the MACRO setting on my little digital camera. Get out your book and read about it. I also use a mini tripod for a lot of my shots and the camera's timer so the camera does not move.

As we all know we need to limit our sugar intake. That being said, if you want something sweet now and then, this is a great recipe. Made with organic whole wheat flour, organic sweet potatoes, organic milk, extra virgin olive oil and free range eggs it packs a lot of nutrition. With or without frosting, it is a winner.

Cake Ingredients:

1/2 cup organic milk
2 cups sugar
1 cup extra virgin olive oil
3 free range eggs, separated

2 1/4 cups organic whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon nutmeg

3 cups grated and peeled organic sweet potatoes
1 1/2 teaspoon vanilla extract


Preheat oven to 350 degrees. In large mixing bowl with electric mixer blend the olive oil and sugar until well blended. Separate eggs. Add egg yolks, vanilla and milk to oil mixture. Blend well and set aside.

Sift 1/4 cup of the flour over grated sweet potatoes. Toss to coat all sweet potatoes well.

In a separate bowl combine the remaining 2 cups of flour, baking soda, baking powder, cinnamon, nutmeg and salt. Add this to the oil mixture and mix well. Fold in coated sweet potatoes.

Beat egg whites stiff and fold into the cake batter. Pour batter into a 10-inch tube cake pan that has been coated with oil and flour. Bake cake 55 minutes or until done.

Frosting Ingredients:

1 cup organic milk
3 tblsp. organic whole wheat flour

1 cup powdered sugar
1 cup organic butter or Smart Balance
1 teaspoon vanilla extract

1 cup coconut
1/2 cup pecans




Place milk and flour in a sauce pan and use a whisk to blend well. Cook over medium heat until it thickens stirring constantly. Remove from heat and allow to cool thoroughly.

Place sugar, butter or Smart Balance and vanilla extract in mixing bowl and mix well with electric mixer. Add flour mixture and mix well.

Stir in coconut and pecans.

What's the surprise? This cake has real nutritional value!

I made apple crisp with 12 kinds of apples (1 of each kind), cinnamon, nutmeg, raisins, brown sugar, lemon zest and lemon juice. Topping of melted butter, rolled oats, brown sugar, cinnamon, nutmeg and lemon zest.

I've always made the Southern cousin, sweet potato pie, but with a little twist.

Canned pumpkin IS real pumpkin.

I have made it both ways and can't justify the extra work of preparing pumpkin. The taste difference was subtle at best.

Yes it is, and the ingredient is 100% pure pumpkin. Nothing artificial is in it.

I have a can of it that I was going to make a pumpkin pie with it last Thanksgiving.

And yes Whoopie Pie, it DOES save lots of labor over cutting up, peeling, seeding and boiling and cooling pumpkin.

Made an apple crisp, and it was good! My mom made it often when I was a kid, but as an adult, I never have.

I found some courtland apples, something that you don't find here in NC, I was excited since these are the apples that I grew up on.

I used the Classic apple crisp recipe from the King Arthur website http://www.kingarthurflour.com/recipes/classic-apple-crisp-recipe.

I used 3 lbs. of apples and increased the crumb topping by 50% to fill a 8X12 pan.

Yes, sounds like the same thing. Apple crisp also usually has rolled oats in the topping as well.

OATMEAL RASPBERRY BAR COOKIES
1/2 c. room temperature butter
1/2 c. light brown sugar
1 c. flour
1/2 tsp. baking soda
1/8 tsp. salt
1 c. rolled oats
3/4 c. fruit jam (only seedless raspberry jam for this recipe)
Heat the oven to 350 degrees. Butter an 8-inch square pan, line it with aluminum foil and then butter the foil. Mix all the ingredients together except the jam. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to 1/4 inch within the edge. Sprinkle the remaining crumb mixture over the top and lightly press it into the jam. Bake at 35-40 minutes. Allow to cool on wire rack before cutting.

Made some more sourdough no-knead bread. They all look the same, so I took a shot of the crumb. Just look at the beautiful crumb from 1/4 C of sourdough starter. Amazing & delicious. These loaves bake out at 28 ounces in weight.

I made Potato, Cheddar, and Chive Bread today from Reinhart's The Bread Baker's Apprentice. This is made with 1-1/2 Cups of sourdough starter, 8 oz. of mashed potatoes and 8 oz. of potato water reserved when making the potatoes.

I know the feeling dacon. I had carpal tunnel syndrome. I had the surgery but still have some problems so i use either my bread machines dough cycle or my KA stand mixer.

I baked 40 loaves of pumpkin bread! My partner takes orders for it at his office, people are now ordering it for themselves and their families, they just love the stuff!

We purchased a house this summer and I replaced the old range that was here with a convection range, what a wonderful decision that was! In my old apartment oven I could only cook 6-8 loaves and I would have to shuffle them around to get even baking. Now with this oven I can bake 16 loaves at once and every one bakes evenly and finish at the same time, no shuffling!

its easy,and fills the house with the best smell!

1 can pumpkin not the pie mix 15 oz
1 2/3 cup sugar
2/3 cup veg. oil
2 teaspoons vanilla
4 eggs
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2teaspoon ground cloves(i dont use them)
bake at350* for 50to 60 minutes makes two loafs
stir in pumpkin sugar oil vanilla eggs then all the others. let cool and enjoy.

I have the dinner rolls ready for tomorrow. When they cool I'll bag them and warm them just before dinner. I brushed the tops with butter for the last 10 minutes of the bake.

These were made with my basic white bread recipe (http://flyfishohio.us/BasicWhiteBread.htm) that I added 1 whole egg and 1 additional egg yolk. I also decreased the water by 2 oz to compensate for the added eggs.

Here is the pecan pie from Thanksgiving, I didn't get a shot of the pumpkin. This was a no corn syrup pecan pie.

I didn't get a great shot, I was using a manual lens and forgot to put it on the correct setting, so I got a bit more bokeh than I had planned.

Ask and you shall receive!


No corn syrup pecan pie

1/2 cup white sugar
1/2 stick unsalted butter, melted
1-1/2 cups light brown sugar
Pinch of salt
2 T. sifted AP flour
3 whole eggs, beaten
1/2 cup half n' half
1 cup pecans, either whole or broken (I like the broken because it's easier to cut the pie.)
Single 9-inch pie crust, unbaked

Preheat oven to 350 degrees.
In a large bowl, beat the eggs. Add the sugars, salt, flour and half n' half and beat until well blended.
Stir in the melted butter and pecans and mix well.
Pour the mixture into your prepared 9-inch pie shell and bake until the filling is cooked but still soft in the middle when you give it a little wiggle, about 45 to 60 minutes depending on your oven.
Cool pie on a rack, chill, cut, eat and enjoy!

I even remembered to take a picture, and they came out looking pretty much the same as the King Arthur website!

I am making another one of their recipes tomorrow, butter pecan cookies, I have already made the batter and have it in the fridge chilling overnight, they recommend this in the recipe, but it is something that I always do with cookie dough, it improves the flavor and texture tremendously.

I saw this recipe on the King Arthur Flour baker's banter blog and knew I had to try it. I love the combination of sweet and salty so I knew that I would love these butter pecan cookies. I made the dough on saturday night and baked a few last night but forgot to roll them in salt and sugar, and they were good, but I rolled them in the mixture tonight and it just put them over the top, and the extra day in the fridge helped them get even more golden brown, Perfect!

I got up at 4:30 this morning (fell asleep in the chair at 7 last night) and I'm just getting ready to put my Cinnamon Raisin bread in the oven. I also have seeded rye on second rise. Had the mixer going at 0530 today, and by 0930 it was all done. Now it needs to cool for a couple hours before cutting the loaves. The cornbread was made because we are all out of sandwich bread and rolls. It turned out to be a big breakfast hit with butter and honey.

I just made the sponge to make the sourdough version of those baguettes. We have a house party to go to tonight, so I thought these might be a hit two days in a row. I might make some lavash crackers as well. Have to see how much time I have today.

The sweet potato pies that I have had have been very similar to pumpkin. One of the differences that I have noticed is that sweet potato pie is often spiced a bit different, often a bit more spice.

Ground ginger is often used in pumpkin pie, but I've never used it in sweet potato pie, which is often refered to as the Southern cousin to pumpkin and squash pie because it is a favorite in the South.

It might be used in all three, but I never made squash pie that I can remember.

Had a hankering for brownies. These are Called "Bangor Big Fat Brownies", from the Great American Bake Sale cookbook. It is a recipe from Brownie Shrumph, a lady that had a recipe column in my local paper back in Maine. These are wonderful brownies, and are about as easy to make as a mix, they even call for cocoa powder, which makes it a great recipe for things already in the pantry.

here is a link to the recipe. I have the cookbook, but just found it online too, so I don't have to type it out, LOL! I'll put it in the recipe section too. The recipe doesn't call for nuts, but I threw in a couple handfuls of walnut halves and pieces, I would say that it was around 1 1/4 cups nuts, best guess.

Just took these two no-knead loaves out of the oven. Both are 30% stone ground whole wheat flour. The long loaf has Italian herbs in it and the other is plain. We'll have one of them with out sirloin tips over noodles tonight with steamed & buttered broccoli and a garden salad.

Thanks Tigerlily, I baked them in ceremic dishes with lids, but would love to buy some cast iron dishes just for baking bread, as soon as the snow clears and I can get to the shops.
I am going to post the bread tonight on my blog if you would like to browse. Yes, no knead method is very easy and fun to make. I have learnt a lot from dough boy and also recommend watching video www.breadtopia.com

I don't know about the vision ware tiger......can it be put in a 450 oven?? It's glass and not ceramic, right? Do you have any Pyrex?? Or a dutch oven?

Hiya tigerlily, I know dough boy mentioned that corningware casserole dish is suitable for this method of bread making. I too use oven temp 450F and corningware should be ok at that temp.5 quart will be just fine.

You are just dropping the dough into the vessel, or perhaps using parchment paper to lay it in. It doesn't actually touch the sides, so even in a square baking dish, the round blob should cook just fine.

The parchment sling is great for handling the no knead bread.

The dough should be just firm enough to hold its shape, so it shouldn't go square unless the vessel is too small. Mine gets baked in an oval cast iron enamel dutch oven and comes out nice and round!
