It's an almond pound cake, baked in a walnut crust, topped with almonds, walnuts, pecans, cashews, and brazil nuts. The whole thing is drizzled in homemade caramel sauce, and served warm with softly whipped cream.
We ate it for breakfast. :D

I woke up late this morning and realized I had to bake a cake for the cake walk at my child's school fall festival.
Less than an hour before I had to report for duty to the face painting booth, I threw an angel food cake into the oven, then pulled down my trusty Betty Crocker cook book (an exact replica of the original from the 1950s, which my mother used constantly), made a chocolate frosting, rushed off to paint faces, rushed back to frost the cake after it was (almost) cool, and rushed back with the frosted cake to the cake walk.
While I was putting the cake on the table, I accidentally knocked someone else's beautifully iced and decorate cupcakes on the ground and ruined them! Not my best baking day ever.

I got some leftover egg whites in the freezer from Labor Day weekend when I made some Royal Vanilla Ice Cream.
The whites weren't needed, so I think I'll use them to make an Angel Food Cake sometime this week.

That bread looks good, do you have a recipe to share?
I don't have a "go to" multigrain bread recipe. I recently made this oatmeal bread from King Arthur and it was really fantastic!

I used the honey option.
If you have a big 2lb. bread maker, I think that this recipe would work in that too.

I was doing that also, when I took pictures of stuff cooking on the stove and the finished product on the plate.
But now, I can't even get the computer to recognise and accept the software for the memory card reader!! It was working before, now it won't.
Looked at the disk and found out that it's not compatible with Windows Vista (only goes up to Windows XP). Bummer!! Have to go get the one that Windows Vista will accept.

Just baked a Seven-up Pound Cake. It is cooling in the pan, then I'll remove it from the pan and finish cooling it.
Looks kind of bumpy and uneven, but the bottom side will be the public side.

I usually leave it plain, since it has enough sugar in it.
Some of it is for a friend, and he can't have too much sugar on account he's a diabetic.
So am I, but my pancreas doesn't produce enough sugar.

I modified the baking time slightly, because in the past, I used to let it go for 90 minutes. Though the cake was done in that time, it was also a bit too dark on the outside - almost as though it had started to burn.
This one, I baked for about 85 minutes, which gives it that nice pretty golden brown look.

Stuffing bread!
I put the poultry seasoning into the bread dough, made a really nice stuffing. It would make some great leftover Thanksgiving turkey sandwiches.

I do that when I make cornbread batter for cornbread stuffing, Whoopie. Great minds think alike, hey?!!
I add some Sylvia's Seasoning and some sage into the batter before baking it. When it comes out of the oven, it smells like stuffing already!

That is when someone would say;
(just an example speech) "Gee, Natt, you're in some serious trouble! Because you just embarrassed yourself by putting your foot in your mouth."
Yes Natt, you're right! It DOES mean that at times.
But if you ever watch Down Home with the Neelys', you might get the chance to hear Pat say this to his wife, Gina; "Oooooweeee!!! Honey, you put your FOOT in this casserole!!! It is so good!!" - meaning that it not only looks good, but tastes good as well.
As you know, literally, it doesn't mean that she actually put her foot in the casserole. She made it so well, that Pat was enjoying eating the casserole.
So I imagine that it DOES have a few instances.
But SilverSage, that is what I was trying to say. Nothing bad at all, just good. So I hope that this clears it up and that no one is upset or offended by it. It is in GOOD intentions, not bad.

No, it's for a wedding. It's got hologram white glitter all over it. Does come up more silver in the picture though.
It's just vanilla with butter cream and jam. They wanted it simple. Would have been a million times easier to put together if they'd wanted the traditional fruit though.

But I'm just a plain cake guy, since I don't like too much frosting on a cake. Thin icing, yes, but not blobs of frosting.
I'm about to make a small coffee cake in about a few minutes.

Mine are some fairly inexpensive 9" from Target. I want to upgrade them eventually to USA Pans, along with my 8" square pans.
Even though they are inexpensive, they get the job done, but I don't expect them to last, although you never know!

Mine are by Chicago Metallic.
They are very heavy, heavy duty and sturdy, as well as being nonstick. Wilton makes them also, but theirs are less sturdy and lighter in weight.
I also have 2 by Avolon, but even though they are heavy, they're made from metal that is prone to rusting.

Mike, approximately how long does each rise take on this recipe. I'm sort of yeast challenged, but I would like to try to time these to go in the oven when the turkey comes out to rest. (I live in Florida, so it will be about 80F in the house on Thursday, and with the oven on, maybe even hotter).
I used the "proofing" setting on my oven, so they proofed quite quickly. I would say allow yourself at least an hour for each rise, or budget an hour and a half each rise just to be safe.
If your kitchen is going to be warm that will help a lot.

Peeps, that pis is beautiful! The crimping is perfect. The crust is golden. And I can imagine a little blackbird poking out of the vent in the top! Not four and twenty blackbirds - just one.

Mom taught me how to do a nice crimp (even though she never mastered it LOL). I am pastry challenged though thats Pillsbury because I didn't want to loss hair LOL. It has a light brushing of milk wash and a sprinkle of sugar and cinnamon on top.
The filling is grannies, lemon zest and juice, raisins, chopped walnuts, cinnamon, nutmeg, bare pinch salt, brown sugar and white sugar. No measurements just till it passes the taste taste. Into the bottom crust, dot with butter, top crust, crimp, vent, wash and sprinkle. Bake at 425F for 50 minutes.

The Moshi Monsters one (middle) looks more like a spring season (Mother's Day or something) cake with the luscious green that would be the "grass" and the flowers on it, and it also looks like a hat.

I think I can, but it's a messy job.
Guess that I WOULD be saving money over buying the pie shells already made. Shortening is needed as well. Don't think I have any.
Still would have to buy the foil deep dish pie pans, because I'm NOT giving people pies in any of my GLASS pie pans, on account I might not get them back!!
That has happened to me before. A former roommate made pies in my glass pie pans, gave the pies to people in them and I blasted NEVER got any of them back!!
We'd get into heated arguments over it because every time I reminded him that I needed them back, he would snap at me!! He loaned them out without asking me first, didn't ever ask for them back, and I was stuck without my classic glass pie plates and had to go buy some more!!
The next time, he had the audacity to want to do it again, loan out my glass pie plates!!! I told him; "No, you're NOT doing that to me again! Go buy your own!" He got mad, but I didn't care. That crap wan't happening to me again!!

I wish I could answer that, but I honestly have no idea what gumpaste is. I use a mix of sugarpaste (fondant) and flowerpaste in approximately a 1:1 ratio. Some of the work, like the flowers, are just flowerpaste (hence the name) and the letters are Mexican modelling paste because it retains it's shape the best out of all pastes.

I don't like making pie crusts, but we both love pie crust, and the pre made ones don't do it for me, so I make them. I've gotten a good feel for making them over the years, so they are pretty easy now.

I'm willing to make my own pie crust, but it just takes a little patience and time, to which I'm always pressed for because a lot of care and time goes into making the filling.
For one thing, I rice the boiled sweet potatoes in order to remove all of the stringy matter, to which I hate with a pure passion something fierce!! Nothing worst than a stringy pie, trust me.
But one day, I'll get up the courage to make the crust myself.

yesterday I made sugar cookies, snowflakes decorated with royal icing and clear and light blue sparkling sugar. I also made butter cookies, sugar coated pecans, and butter toffee. I sent out most of it in boxes to friends and family today.

Was going to make some homemade pie crust, but found 2 premades in the freezer, so I quickly canned the idea of making pie shells until the next time that I make pies.
But I DO have some shortening now for it.

They still may be soft, but I think that I made them a bit too thick. So they might harden in time, if they haven't already.
Texture seems ok, but the next time, I think I'll have to tweak the recipe a bit more to get them closer to the perfection that I'd like for them to have.
Oven calibration is off by about 25 degrees, making it cook about 25% slower than normal, so I had to tweak to toy with the temp setting in order to try to get them right on track.

I've now made 8 Kransekake. They changed a little, I started using a No. 4 tube instead of a 2 because the 2 was taking too long, and snow flakes instead of stars because I ran out of gold lustre.

last night I made peanut butter balls, used the leftover chocolate to make chocolate dipped, candy cane Joe Joe's (like a peppermint filled oreo, only better). I made the dough for oatmeal rolls, to bake today for christmas eve dinner, and red velvet cake for Christmas dinner.

Darkginger, I LOVE filo mince parcels. I remember taken them into the school Christmas party in year 3, but I never make them now, I really should cos they are the best kind of mince pie.
As I had planned today was the turn of the gingerbread house, I was especially excited as I have never made a gingerbread house before, but it's something I've always wanted to do.

I used to make gingerbread houses when I was a teenager, I made one every year. My favorite was making a church, I would make hard candy and pour it into the window holes and take paste food colors and paint "stained glass" windows! Wish I had pictures of them. I would place a single bulb in the back.

Thank you DG and SS. Homemade is so much better than store or restaurant. The filling in store and restaurant pies are to sweet and don't taste much like lemon and the meringue is like tasteless rubber. YUCK. This recipe is perfectly balanced sweet and tangy filling and the meringue is sweet and vanilla flavor.

Made another batch of blueberry muffins today.
This time, I tweaked the recipe a little bit by adding an additional egg, increasing the milk to 1 whole cup and increasing the oil to 1/3 cup. Also, I lowered the oven temp to 400 degrees.
These are softer, but even though they feel a little heavier, the sides and bottoms are lighter and the muffins themselves are softer in texture and touch.
I just wasn't satisfied with the first batch, as it seemed tough and a bit hard. So I made some slight modifications to the recipe.

I had my first baking disaster in ages today!! I don't even have photos of it because it was so disastrous that I was more focused on forgetting!
They were supposed to be cola flavoured cupcakes from a recipe in the COX cookies and cakes book by Eric Lanlard and Patrick Cox, everything about it was awful, the cupcakes were the texture of bread pudding (although tasted very much like cola!) and the frosting was way too thin, sweet and tasted a little vinegary....
I have am amazing idea for a junk food themed wedding cake (it's been requested, it's not my brief) but it seems it's gonna take some more trial and error before I can suggest it to her.

I made a large carrot sheet cake for the Boys & Girls Club Christmas Party last month. One of the women who works there called last week and asked me to make one for her - and she paid me! Does that make me a professional now???;)
This was just an 8-inch layer cake, because she wanted it all for herself.
Carrot cake with raisins & walnuts - Cream cheese frosting - chopped walnuts.

And a new skill that I've just got the hang of (I am under the impression it's used more in the states anyway as I learnt of it from an American website and then went on to watch an American tutorial). My first real use of frozen Buttercream transfer, I was going to go for a more complicated design, but it was the first time I've done it to actually put on a cake and I didn't have time to mess up tbh.

You pretty much just pipe in reverse, so start in the centre instead of the edge. I would rather have used a sharper tube to pipe with, but the effect is still what I want.

I actually have SS to thank for finding out about this idea because she reminded me about Pinterest where I found the idea the other day.
They are simple Victoria sponge batter, as it was the first time trying it I didn't want to make it too complicated. Would definitely work well with different mixes of flavours though.

It's made out to be pretty complicated when all you do is bake a small tray of any coloured sponge until is it just baked. Let it cool and then cut shapes out that are small enough to fit in cupcake cakes. They suggest freezing them to prevent overbaking on the second bake, but I didn't find it a problem to be honest.
Then place each cake shape into each cupcake case and surround with plain cake batter and bake.
The heart in this one rose a little, they didn't all rise but I'm gonna do another trial run before I make the actual wedding cupcakes that these were practices for.

We don't buy bread anymore since I've been baking my own loaves.
Usually it's the standard white bread, a modified version of Amish White that is on Allrecipes dot com.
Today I did a loaf of rye bread. Baking bread is always an adventure for me. Try as I might, I can never be completely consistent -- MEANING the loaves turn out slightly different every time. They're still delicious and edible, just a little chewier or denser, or sweeter (or not) than the last time.
Baking is such an imperfect art - depending on the definition of perfect. All rye breads are tasty per Se, but as rye breads go this loaf was SLIGHTLY less than I hoped for. My recipe (always subject to change) used all propose flour - difficult to get the loaf to rise without it, but in this case I may have used too much. It tastes like a cross between wheat bread and rye. Also the loaf is a little tall, meaning I let it rise in the pan an extra hour before oven time. It's nice and light and fluffy. Would make awesome sandwich bread, but not as savory as a denser rye would be.

I see it like working on polishing the paint on a car. I can fine sand, basic polish with rubbing compound, polish with fine grit, super polish after that and from 5 feet away it looks like a mirror. But when I get close up like 3 inches with a bright light at an angle I can see tiny scratches that will never really go away. Meaning no matter how hard I try, I will never, ever achieve perfection. But it's sure fun to try!

Tunaoue, I thought it looked like a brilliant brown loaf with a great crumb until you said it was rye! It lookes like a lovely light loaf though, and although it may not be what you were hoping for, technique wise it looks pretty great!
Today I made cupcakes for a girl at work who is moving to start a new job in London this week. They are vanilla sponge with purple hearts and flowers in the centres (like my last photo, only purple!) :)

Ingredients
• 2 sticks unsalted butter
• 1/3 cup cocoa powder
• 1 teaspoon kosher salt
• 1 cup water
• 2 cups all-purpose flour
• 1 3/4 cups sugar
• 1 1/2 teaspoons baking soda
• 2 large eggs
• 1/2 cup sour cream
• 1 teaspoon pure vanilla extract
1. Position a rack in the center of the oven and heat to 350°F . Butter and flour a 10- or 12-cup Bundt pan and set aside.
2. In a small saucepan, combine the butter, cocoa powder, salt, and water and place over medium heat. Cook, stirring, just until melted and combined. Remove from the heat and set aside.
3. Place the flour, sugar, and baking soda in a large bowl and whisk to blend. Add half of the melted butter mixture and whisk until completely blended (the mixture will be quite thick). Add the remaining butter mixture and whisk until combined. Add the eggs, one at a time, whisking until completely blended before adding the next egg. Whisk in the sour cream and vanilla until smooth.
4. Scrape the batter into the prepared pan and bake until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Let the cake cool in the pan for 15 minutes and then invert onto a rack. Let cool completely before glazing.
Quick Chocolate Glaze (my own recipe)
• 1 box powdered sugar
• Unsweetened Cocoa powder
• Whole milk
• 1 teaspoon Vanilla
In a Cuisinart (you can do this with whisk or hand mixer, but machine makes really quick work of it), put powdered sugar into Cuisinart bowl with chopper attachment and whir to break up lumps.
Start with 1/8 to ¼ cup cocoa (use more or less depending on color/taste you want). Start it whirring to combine and through feed tube add vanilla and milk (add milk slowly as you don’t need much to make it creamy and it is easier to correct thickness than thinness).
The thicker the glaze the more it tastes like buttercream frosting and the better it hangs on the cake. The thinner, the more glaze-like it appears and the more it covers. Drizzle the glaze over the cooled cake, allowing it to drip down the sides. Decorate with garnish of your choice. I used sliced almonds in a petal fashion with M&M flour centers.

A friend gave me a hunk of pound cake that his mom made (she's so southern, you'd swear that she was a character from Steel Magnolias!). It was a 5 flavor pound cake, and oh my goodness was it amazing! The 5 extracts blend so that not one stands out much, but create a really great flavor. I need to make one of those ASAP!

I've been making this particular pound cake for many, years.
I've gotten so good at it that I don't even look at the recipe or the ingredients any more, though I still measure everything in it for accuracy and to be on the safe side. Only requires six ingredients.
There is nothing, and I mean NOTHING, worst than having a ruined cake after all that hard work and TLC was put into it, not to mention the expensive ingredients involved!!
That has happened once, and I've been very careful not to let it happen again! But that was only because I mistakingly used self-rising flour instead regular flour. It was a complete DISASTER!!!!!

The sooner, the better!!
I mean, I can bake, and I've baked my butt off, making everything from coconut custard pies, to German Chocolate Cake, to pound cakse, lemon meringue pies, to white & yellow layer cakes, brownies and angel cake. All from scratch. Not to mention yeast breads and rolls.
But the way that I bake cakes & deserts is normally bare bones - no frostings or decorations accept maybe a plain frosted layer cake or an iced or powered-sugar-dusted pound cake now and then.
But I think Natt has me beat!! I once even tried to make fondant, and it just wouldn't come out right at all!! Frustrated, I never tried to do it again!!
But yeah, those fabulous creationa that Natt has made are over the top!!! Great work, Natt!!!!! :)
