View Full Version : Looking for snack bar/health bar recipe for kids

Hi Everybody,

Can anybody point me toward some recipes for snack bars or health bars that kids might like? Sometimes I buy granola bar style snacks for my son's lunch, but I'm not wild about them. Almost all of them contain high fructose corn syrup. I don't mind if he has something sweet, but I'd like something more natural. He's not terribly fussy, so things with oatmeal, whole wheat, peanut butter, wheat germ, dried fruit, etc. would all be all right. Chocolate chips would probably be a hit too.

Easy Granola Bars

Ingredients:
1/4 cup butter or margarine

4 cups miniature marshmallows

1 cup rolled oats

1 cup crushed graham crackers

1/2 cup raisins

1/4 cup raw sunflower seeds

1/4 cup coconut

1/2 cup ground flaxseed

Melt butter in the microwave.

Procedure

Add marshmallows, microwave on high for 1 minute, stir and microwave again until marshmallows are melted.

Stir in oats, graham crumbs, flaxseed, raisins, sunflower seeds and coconut until thoroughly coated.

Press into a greased 9X13 inch pan with greased fingers.

Let cool. Cut into 6 rows lengthwise and 4 crosswise.

Best Ever Snickerdoodles

1/2 cup margarine -- soft
1/2 cup soy flour -- sifted
1/2 cup all-purpose flour
1 cup sugar
1 egg
1/2 teaspoon vanilla
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup wheat flour, whole-grain
2 tablespoons sugar
1 teaspoon cinnamon

Mix margarine on high speed for 30 seconds. Add soy flour, all-purpose flour, 1 cup sugar, egg, vanilla, baking soda and baking powder. Beat together. Beat in the whole wheat flour.

Chill dough for 1 hour. Shape into 1" balls. Roll the balls in sugar/cinnamon mixture and place on a greased cookie sheet. Bake in 375ºF oven for 10 minutes. Cool on a wire rack.

Makes: About 40

Black-Bottom Banana Bars

1/2 cup butter or margarine -- softened
1 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups bananas -- (about 3 medium) ripe, mashed
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup cocoa powder -- baking

In a mixing bowl, cream butter and sugar.
Add egg and vanilla; beat until thoroughly combined.
Blend in the bananas.
Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well.
Divide batter in half.
Add cocoa to half; spread into a greased 13-in x 9-in pan.
Spoon remaining batter on top and swirl with a knife.
Bake at 350 degrees for 25 minutes or until the bars test done.
Cool.

Chip Chicken Lollipops
INGREDIENTS (Nutrition)

* 4 skinless, boneless chicken breast halves - cut into 1/2 inch cubes
* 1 egg
* 2 tablespoons milk
* 2 cups crushed potato chips
* lollipop sticks from a craft or party store

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
2. Crush potato chips onto a plate. In a large bowl, whisk together egg and milk. Dip the chicken cubes into the egg mixture, then coat well with potato chips. Spread the nuggets onto the baking sheet.
3. Bake for 10 minutes. Turn nuggets over, and bake for 10 minutes more, until golden brown. Remove baking sheet from oven, and insert a lollipop stick into each nugget.

Grilled Pizza Wraps

INGREDIENTS (Nutrition)

* 2 tablespoons margarine, softened
* 8 (10 inch) flour tortillas
* 1 (16 ounce) package shredded Cheddar-Monterey Jack cheese blend
* 1/2 cup pizza sauce
* 4 ounces sliced pepperoni

DIRECTIONS

1. Heat a large skillet over medium-low heat. Spread margarine over one side of a tortilla, and place it margarine-side down in the skillet. Spoon a tablespoon of pizza sauce onto half of the tortilla. Sprinkle 1/2 cup of shredded cheese over the sauce, and top with a few slices of pepperoni. Fold the clean half of the tortilla over the filling, and cook until golden on each side. Repeat with remaining tortillas.

Thanks for the recipes. These all sound really great. The Grilled pizza wraps should be a hit, and those black bottom bananas look good. I can't stand banana, but my kids eat them.

Wow, chicken lolipops kids will surely love it. I also have a recipe to share:

Crunchy Snack Mix
Ingredients

* 1 cup animal crackers
* 1 cup teddy bear-shaped chocolate or honey, graham snacks
* 1 cup miniature pretzel twists
* 1 cup yogurt-covered raisins
* 1 cup candy-coated chocolate candy

Serve this kid-pleasin' snack mix in colorful ice cream cones or cups.

Bacon Mustard Crisps
8 slices smoked bacon
1/2 cup ice water
1/4 cup Dijon mustard
2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1 teaspoon white pepper
6 tablespoons cold butter, cut into 6 pieces

1. Place oven rack in middle position. Preheat oven to 450*F (230*C).
2. Cook bacon in large skillet until crisp. Place on paper towels to drain and reserve 2 tablespoons of bacon drippings. Finely chop bacon.
3. In a food processor fitted with the metal blade, combine water, mustard and 2 tablespoons bacon drippings. Process until just blended.
4. In a food processor fitted with the metal blade, combine flour, salt, baking powder and white pepper. Process to combine. Add cold butter; pulse until mixture resembles coarse meal. Add mustard mixture and pulse until just blended. Add bacon and pulse one or two times, just enough to blend in bacon.
5. Place mixture on lightly floured work surface. With a floured rolling pin, roll dough to a 1/8-inch thickness. Dip 2-inch round cutter in flour and press into dough. Place rounds on 2 ungreased baking sheets. Gather scraps and roll out and continue to cut out as many rounds as possible.
6. Bake in preheated oven for 10 to12 minutes, or until golden. Transfer to cooling racks. Serve with cheese and fruit.

Hiya

I made honey nut flapjacs tonight, they were quick and easy to make, taste great and you can add whatever fruity bits you like to them for a healthier bar. I drizzled mine with melted chocolate so not so healthy!

7 oz rolled oats
2 oz plain flour
4 oz chopped hazlenuts

MIX ALL OF THE ABOVE TOGETHER

4 oz butter (unsalted)
3 oz light brown sugar
2 tbsp honey

Melt the butter, sugar and honey over a low heat until melted, tip into the oat mix and stir well. Put in a greased ovenproof dish or baking tray and press flat. Bake in 180 degree oven for about 20 mins or until golden. Mark into slices while still warm and then leave to cool completely in the tin.
