My name is Tracy. I've been cooking for years. I started out mediocre and I'd like to think I'm in the good category now, but still a lot to learn, so hopefully forum participation will help with that. I've been pushing the envelope a lot lately with a good share of failures (especially with cheesemaking). Or how about this. I don't know where I read, heard, or fantasized that egg yolks could be saved in the freezer but it did not work. The yolks were rubbery and useless after only 2 weeks. Live and learn.

Baking is my passion, especially bread and pies, but I do cakes and cookies too. I even started making bread and pie entries in the regional fair the last two years. Very fun.

I've been learning to use a sun oven too. It's quite an art but very amazing and sometimes with awesome results. Great to bake things in the summer without heating up the house, especially bread.

I could stand to pick up some good casserole and slow cooker recipes.

Welcome to the Forum from another earthquake territory member.

If you must freeze egg yolks only, mixing 1 teaspoon of salt, 1 tablespoon of sugar, or 4 tablespoons of lemon juice per pint should eliminate much of your problem. I store whole eggs by scrambling them and flash freezing in ice cube or mini muffin silicon trays.

Congratulations on your success with the Solar Oven. Was it home made or purchased? There are recipes around, mostly on the survival and camping websites and message boards. Maybe one like http://www.backwoodshome.com (http://www.backwoodshome.com/) would have something for you.

I'm heavily involved in canning and dehydrating foods and building my stockpile up so it can all be washed away when the Tsunami hits. :D

Thanks for the reply mcnerd. It's nice to know freezing eggs remains possible. I just didn't try hard enough.

I'm really into canning too.

The solar oven was purchased. Baking breads in it are my favorite things to do, followed by pork.

I like your bacteria slogan. It has some true Mark Twain style to it.

The signature slogan kind of fits with the help I 'try' to give people on the Internet about proper and safe canning procedures. A recent study by the USDA and other food agencies showed that 44% of new comers were not interested in following established canning rules and procedures....as if they were somehow immune to injury, like in the movies.
