Paprika, coriander, nutmeg, ginger, black pepper, star anise, cardamom, cloves, mustard grains, saffron

Use chilli flakes almost everyday LOL, I love it. Use ginger, black pepper, coriander, mix spice, cinnamon and garam masala quite often.

I use spices and herbs in almost everything I cook. I don't think you can really have a "favorite" because different spices are used for different things. I guess if I had to pick the most versatile and one that I use most often, it would be
This One. (http://www.foodnetwork.com/recipes/emeril-lagasse/emerils-essence-recipe/index.html) I love this and have separated the recipe into two other parts and added ingredient to make a rub for pork and beef, and another one for fish.

Forgot to mention Cummin. Use it more than other spices. I am trying to use Turmeric mor because of health benefits.

I agree on the Turmeric. As magical as aspirin, though I wish it did not turn my white utensils a rich yellow/gold color. :)

Turmeric seems to get everywhere lol, I use it when making Picallili, also Indian dishes.
I too use different spices for different dishes, I love the flavour it bring out in the food. I can't think of one I don't like.
