To remove individual garlic cloves: peel outer layers from the bulb and snap out each clove from the base.

Peeling the garlic: if the skin won't come off easily, just pour hot water over the garlic bud.

To remove garlic odor from hands: use salt or lemon juice and then wash your hands with soap

Want something better than lemon juice and soap? Just rub your hands over anything made of stainless steel. Your knife, pot or utensil. It HAS to be stainless. No more garlic odor. Works like a charm.

I take the garlic clove, lay it on a chopping board & lay the flat side of a knife on it, just give it a bit of a whack (not too hard) with the palm of my hand, the skin releases itself in one go. If you want to stop the smell of garlic on your breath, remove the little green bit in the middle. I will try the stainless steel trick, thank you.

Leslie thanks for commenting on my blog. To answer your question about Havarti, you can juse any good melting cheese preferably white such as Gruyere, good quality Swiss etc. I prefer Havarti because of it's richness, buttery flavor and texture and it melts soooooo beautifully.

Your welcome, talking of cheeses, a friend bought a new cheese to the table on New Years Eve, Christmas cake cheese, I wasn't sure about this!! lol but it was awesome!!

The answer is an easy one, fall is the best time to plant garlic and the following summer you will be enjoying your own fresh garlic. Grow garlic in rich well drained soils in rows spaces a minimum of 2 feet apart.

Here are a few tips for peeling, chopping, and mincing garlic.

To peel garlic quickly, place a large and wide knife (such as a chef's knife) over the garlic clove and hit it hard, but not too hard. The garlic should crack a bit, making it easy to remove the peel. If you're going to crush the garlic, hit it harder to smash the garlic, then remove the peel and continue mincing the crushed garlic.
Don't you hate it when the garlic sticks to the knife as you mince or chop? Try sprinkling a garlic clove with just a dash of salt before mincing. The salt absorbs a little of the liquid, so won't be as sticky.

Use a garlic press to mash or crush garlic, or put the cloves of garlic in a small food storage bag and pound with a meat mallet to mash or crush. The flat side of a chef's knife is another easy way to crush a clove of garlic.

If whacking the clove is not your style, you can always remove a clove from the garlic head the way Jaques Pepin does....
cut off just the end of the garlic clove, place it on the cutting board and lightly tap the clove with the side of a knife. This will loosen the paper from the clove and you can pick up the uncut end and the clove should fall out of the skin.

While at a friend's house this morning, I saw a commercial on TV about another new kitchen gadget that it designed to chop garlic just by twisting the two ends.

A tube-shaped rubber peeler cmes with it that you peel the cloves with.

The stainless steel thing works! I bought a kitchen gadget that is shaped like a piece of soap made out of stainless steel. You just wash your hands with it and the smell disappears, I think it's the best thing since sliced bread!

if u have milk with garlic i.e add boiled garlic in milk.

Salt also provides a very effective abraisive action for garlic cloves when you want to mash them with the knife beveled to the extreme side.

Or use a mortar & pestal.

It sounds to me that you are using stall garlic. In my neck of the woods (China) garlic is very cheap and is only used if it is fresh. The cloves peel easily, just cut the two ends off and the skin is easy to remove. Whack it with the side of a knife if you must, but the trick is to cut the two ends off.

I just planted garlic for a harvest next summer, so I will be enjoying home grown garlic then. I would recommend when you can check out the locak farmer's market. I found garlic there that was better than anything I ever bought in a store.
