Cheese and tomato have always gone well together, so when I bought some very ripe Gorgonzola at the weekend I thought I’d try it with the puff pastry and baby tomatoes. I only used a small amount of cheese because it’s got quite a kick to it, almost spicy.
I made these little canapes to serve up at Christmas, really just for when friends and family drop in. We ate them warm, but they’re just as tasty cold, and can be kept in the fridge for a few days. I used a Tupperware container, but any similar container will do.
The thing I like about these, is that they have all the flavour but none of the mess, (they’re gone in two bites).
I’ve tried them with Stilton, Brie, grated cheddar and just plain Parmesan, they all worked great.
Cheese and Tomato Puffs
Makes Approx 20
Prep Time None
Cooking Time 10-15 mins
Ingredients
* 1 Pkt Puff pastry (shop bought)
* 4oz/115g Gorgonzola Cheese
* 7-8 Baby tomatoes cut into 3 slices
Method
* Lay out the pastry on a clean surface
* Use a pastry cutter to cut about 20 squares
* Carefully lay the squares on a baking tray
* Put a teaspoonful of cheese on each square, diagonally; don't go too near the edges
* Lay 2 slices of tomato on top of the cheese
* Bake in a preheated oven 220°C/425°F/Gas mark 7 for 10-15 minutes

* Square pastry cutter 2"/50mm
