I require a knife sharpener for new set of (blunt) knifes and also for older knifes. They're not expensive knifes but don't want to knacker them by ruining the edge. I have a few knife sharpnerer types, a metal rod thing, one with two wheels, and one in a fork handle V shape and none do a good job.
Would also like to sharpen scissors, stanley knife blades, pocket knives etc.

i prefer to use a steel (metal rod thing). you get a much better edge on knives. i would reccommend a ceramic steel.

Are there no sharpeners which adjust the angle of the grinders to match the edge of the blade?

Steel is just used for already sharp knives to fold the edge back though? I've bought a set of new knives, and you can run the edge along your finger- it doesn't cut the skin. Using steel won't sharpen them.

I use Spyderco. It is good for serrated knives too. The biggest advantage is that it is manual - you control the sped of the machine and can turn it as you want.

I posted this in another forum to someone with a similar question. You could always go for an inexpensive solution and get a handheld knife sharpener such as those made by ChefMaster sold at retail stores. They have reversible carbide blades that extend the life of the sharpener, they keep all of my knives razor sharp and they are dishwasher safe to boot. They can sharpen serrated and non-serrated knives and you can get them for around $10-$15.

Is that true? If it is it's great!!! I've always wanted to have an inexpensive knife sharpener we have one and we it cost expensive and last week it broke easily. I'm interested about the knife sharpener you are recommending hope I could find one.

I love my Chef's Choice I use it for all of my knives calphalon and such. Works GREAT for me.

I use to prefer iron sharpener instead of steel because it quickly and easily sharpens the knife edges for long time.
