What types of vinegar do you use for different meals? What ones do you always have on hand?

In our house we have white vinegar, and balsamic vinegar.:)

I use:

1. balsamic vinegar
2. apple cider vinegar
3. red wine vinegar

Fini Balsamic - Balsamic Chicken with White beans and wilted spinach, Balsamic Galzed chicken breasts, and as a dip for a Good French bread or Focaccia

Red Wine - for my barbecue sauce, marinades, bastes and such

Apple Cidar - for barbecue sauce mostly

Mirin - for teriyaki sauce and Asian marinades and sauces

Rice Wine Vingar - for Asian Marinades and sauces

Distilled white vinegar - for marinating veggies, deviled eggs, my potato salad, and cleaning the coffee maker and such. LOL

I have on hand and use Balsamic, Red Wine, White Wine, Rice Wine, Mirin, Distilled White, Apple Cider and Malt Vinegars. I buy the apple cider and white vinegars by the gallons since they have much more generalized uses, including canning/pickling foods and cleaning.

I know you didn't ask me Liketobake, but mirin is a sweet vinegar.

Correct, Aji-Mirin is basically rice vinegar, sugar and salt. It is used in cooking and for some marinades. I had never heard of it before either and just got some awhile ago to try it since I've seen a couple recipes that used it.

Here is a Great simple Teriyaki baste and glaze recipe that uses Mirin

This makes about 1 cup

Ingredients

Sauce:
½ cup soy sauce
¼ cup water
2 tablespoons sweet rice wine
1 tablespoon, plus 2 teaspoons brown sugar
¼ cup sugar
1 ½ teaspoons minced garlic
1 ½ teaspoons minced ginger
Glaze:
½ tablespoon cornstarch
1 tablespoon water

Directions
1. Combine ingredients in a saucepan on medium heat until the sugar is dissolved.
2. To make glaze: Mix 1/2 tablespoon cornstarch with 1 tablespoon water. Heat sauce on medium high heat and add cornstarch water mixture. Simmer until thickened.

I keep the following vinegars in my pantry...Red wine, Balsamic,White wine and cider. I also keep a bottle of Palm vinegar which I use when making Vindaloo and other curries. (mainly Goan )
