Hello All!
Am looking for good tried and true bread machine recipes - especially if it is sour dough.
If you have a good tried and true sour dough recipe that isn't a bread machine type, I'd take that too.

Here is a recipe that I got from a friend that is half bread machine and half manual labor but I can tell you it is so worth the effort. In cooking school I specialized in baking and pastry arts but always hated waiting on dough to rise and the whole process, but I find this recipe to be tolerable to my finicky baking temperament. If you let the bread machine do the kneading and rising for you, the rest is a piece of cake. Everytime I make these my friends and family beg for more.
Cinnamon Rolls
INGREDIENTS:
1 cup warm milk (110 degrees F/45 degrees C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast
1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened
1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
DIRECTIONS:
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

This sounds absolutely delectable!! I've copied it and will try it soon.
In the meanwhile, I've found a recipe on the Internet - don't remember now where - for Black Russian Rye Bread, which is to die for using creamed cheese as a spread. I've even used Jam as well. Very good!
Only thing with this bread is that I've not perfected it being baked in the machine yet. So, it needs to be treated like you do with your dough above and baked in an oven in an appropriate pan - which I do not currently have but intend to get one this week. And I’ve found it needs about 75 minutes or more to bake due to its size and weight.
Here is the recipe. Hope you make it and hope you enjoy it as much as I have.
Russian Black Bread for bread machine

INGREDIENTS:
· 1 1/2 cups warm water
· 2 tablespoons cider vinegar (I used only 1 and it is fine, but no bite)
· 2 tablespoons butter at room temp
· 2 tablespoons dark molasses
· 1 tablespoon brown sugar
· 2 1/2 cups bread flour
· 1 cup rye flour
· 2 tablespoons gluten (my addition, not the poster’s)
· 3 tablespoons unsweetened cocoa powder
· 1 teaspoon salt
· 1 teaspoon instant coffee granules
· 1 tablespoon caraway seed
· 1/4 teaspoon fennel seed (optional – I’ve not used)
· 2 teaspoons active dry yeast (this may be where I get into trouble as I’ve used bread machine yeast)
DIRECTIONS:
1. Place ingredients into the bread machine in order suggested by the manufacturer.
2. Use the whole wheat, regular crust setting, large loaf (2 lb loaf – not 1½ as the poster states).
3. After the baking cycle ends, remove bread from pan, place on a cake rack, and allow to cool for 1 hour before slicing.
