What do you do with your leftover foods? Do you try to make other dishes with them or do you toss them freeze them...?
I usually like to try to make something else out of most of my leftovers.
Now that we are in the season with heavy foods and LOTS of gatherings there will be plenty of leftovers to work with.
Share your ideas here!!

Roasted turkey leftovers
Turkey and wild rice soup
serves 6
Ingredients
6 slices bacon, cut into ½ inch pieces
1 pound turkey breast tenderloins, (I like to use leftover Turkey from Thanksgiving in this too)
½ cup cut into ¾ inch pieces
½ cup onion, chopped
½ cup carrot, chopped
½ cup celery, Chopped
2 containers chicken broth, 32 ounce size
1 can condensed cream of chicken soup
¼ teaspoon dried marjoram
1/8 teaspoon pepper
1 ¼ cups uncooked wild rice, Rinsed and drained
Directions
1. Cook bacon in 10 inch skillet (for 6 servings) or 8 inch skillet (for 2 servings) over medium heat, stirring occasionally, until crisp. Stir in turkey. Cook 3 to 5 minutes, stirring occasionally, until turkey is brown. Stir in onion, carrot and celery. Cook 2 minutes, stirring occasionally; drain.
2. for 6 servings, beat 1 can of broth and the soup in 3 ½ to 6 quart slow cooker, using wire whisk, until smooth. Stir in remaining can of broth, the marjoram and pepper. Stir in turkey mixture and wild rice. For 2 servings, mix turkey mixture and remaining ingredients except sour cream in 2 ½ to 3 ½ quart slow cooker.
3. Cover and cook on high heat setting 30 minutes.
4. Reduce heat to low setting. Cook 6 to 7 hours or until wild rice is tender and liquid is absorbed. For 2 servings, stir in sour cream
Notes Adjust seasonings to taste. Add more chicken broth if it gets too thick.

Turkey Gravy and Stuffing Wrap
Ingredients
12-inch tortilla wraps
Cranberry sauce
Sliced turkey
Stuffing
Parsley, for garnish
Directions
1. Spread 3 tablespoons of cranberry sauce on a tortilla wrap. Lay 2 to 3 turkey slices on the wrap. Top with 3 to 4 tablespoons of stuffing. Roll the wrap. Cut on the bias. Plate wrap and garnish with sprig of parsley.

Stuffing Frittata
2-4
Ingredients
Cooking spray
2 to 3 cups leftover stuffing
1 cup shredded Cheddar (regular or reduced-fat)
6 large eggs
2 large egg whites
¾ cup milk
½ teaspoon mustard powder
¼ teaspoon ground nutmeg
2 tablespoons grated Parmesan
Salt and pepper
1 tablespoon chopped fresh parsley leaves
1. Preheat broiler.
2. Coat an ovenproof nonstick skillet with cooking spray and place over medium heat. Put stuffing in the bottom of pan to warm and stir to break up a little. Sprinkle cheese over top.
3. In a medium bowl, whisk together eggs, egg whites, milk, mustard powder, and nutmeg. Pour mixture over stuffing and cheese to cover stuffing. Sprinkle Parmesan over top. Cook on stovetop over low heat for 5 to 7 minutes. Transfer to the broiler and broil for about 2 minutes, until egg is cooked through and cheese is golden and bubbly.
4. Sprinkle with salt, pepper, and fresh parsley. Serve with sliced tomatoes.
Notes: I made a smaller one, I used about 1 to 1 ½ cups stuffing, about ½ cup shredded cheese, two eggs, onion powder, garlic powder, ½ teaspoon mustard powder 1/8 cup milk, and about 2 large handfuls of parmesan cheese and cooked it in a 8” ovenproof skillet.

Cheesy Rosemary Turkey Bake
serves
6-8
Ingredients
6 cups chopped cooked turkey
1 cup mayonnaise
¼ cup slivered almonds
6 stalks (3 cups) celery, sliced ½ inch
2 cups shredded cheddar cheese
1 medium onion, chopped
2 tablespoons lemon juice
1 teaspoon dried rosemary, crushed
½ teaspoon salt
½ teaspoon pepper
Directions
1. Heat oven to 350 F. Grease 13 x 9 inch (3 quart) baking dish, pan or 3 quart casserole. Set aside.
2. Stir together all ingredients except ½ cup cheese in large bowl. Spoon into baking dish.
3. Cover; bake for 45 to 55 minutes or until heated through.
4. Sprinkle with remaining cheese. Continue baking for 5 minutes or until cheese is melted.
Notes: My notes are: I would use ½ of the rosemary it calls for, add garlic powder, pepper, sage and maybe some thyme. And has almost too much celery.

Leftover Pot Roast

In Edit: I forgot sandwiches and sandwich spread made with the leftover pot roast, mayonnaise, mustard, onion, garlic, dill pickle, and what ever else floats your boat. run the meat through the food processor or food grinder along with the pickles, and other veggies. Not the mayo or mustard. It makes a GREAT sandwich.
