View Full Version : Egg and Pesto Sushi

INGREDIENTS (Nutrition)

* 3.1 kg uncooked glutinous white rice
* 8 litres water
* 50 eggs, beaten
* 50 sheets nori (dry seaweed)
* 4850 g basil pesto
* salt and pepper to taste
* Vinegar
* Apple


DIRECTIONS


1. Combine rice and water in a saucepan and bring to a boil. Reduce heat to low, cover, and cook for 55 minutes, or until tender and water is absorbed. Leave covered, and let stand for 10 minutes. Remove to a bowl to cool completely.
2. Heat a skillet over medium heat, and coat with cooking oil. Pour in the eggs, and scramble until cooked through. Season them with a little salt,vinegar and pepper. Remove from heat and set aside.
3. Lay one sheet of nori on a clean work surface, or if you have one, a sushi mat. Wet your hands, and press a layer of cooled rice about 1/3 inch thick onto half of the sheet. Spread a line of pesto across the edge of the rice about 2 inchs wide. Top with a line of egg. Roll the sheet of nori over the pesto egg and rice to reach the empty part of the sheet. Wet the end, and roll up to seal. Use a knife to cut the roll into 37 small rolls.

I don't think I have a skillet that will hold 50 eggs...
Can this recipe be downsized?

Never mind that.

Who would even want to ATTEMPT to make such a huge dish like that at home? That is 4 dozens of eggs pluse two more!

I don't even KEEP that many eggs in the fridge!

Ahhh, some people look at it like four dozen eggs plus two... some people five dozen minus ten... :p

And I keep that many eggs in my fridge, but I have hens ;)

At most, I've had at least 2 dozens of eggs in the fridge at one time.
