Onions will store in a cool, dark, dry location for months. Since I don't really have a cool cellar or pantry I usually chop or dice them, flash freeze, and then freeze in vacuum-seal bags.

Garlic can be frozen, any way you want to, whole bulbs or individual peeled cloves. You can store some (forever) in a jar of wine vinegar (not oil).

A mixture of salt and baking soda will increase the onions lifetime by 50%

I also do as mcnerd. I chop and freeze my older onions so I don't loose them.

What a good idea to freeze onions (prechopped). That must save lots of time. I should try this.:D
