I sometimes come across a recipe or two that will work for those friends of ours that either don't like to cook or don't know how.

They need something EASY, and very tasty, and as few ingredients as possible. I always get asked for a good easy recipe by several of my friends and would like to give them some new ones.
I recently found a couple that will work for just these people.

Royal Round Steak!
Serves 4-6

1-2 pounds stew meat cut into cubes
2 cans cream of mushroom soup
1 envelope beefy onion, or plain onion soup mix

Brown meat in skillet with olive oil (I would not use salt as the soups and soup mix are salty) In a bowl combine soups and soup mix. Mix well add to crock pot / slow cooker add beef. turn on low for 6 hours.
Serve over wide egg noodles.

Tips: I added 1/2 cup sour cream to make it taste just a bit more like stroganoff. and If you use a slow cooker / crock pot liner the clean up is a snap!

Creamy Beef and potato stew

12 ounces stew meat cut into cubes
1 package betty crocker au gratin potatos
3 cups water
1/2 teaspoon dried thyme
16 ounces frozen green beans

brown stew meat in skillet with olive oil. in crock pot / slow cooker add all other ingredients. Add beef and stir. Cover and cook on low heat setting for 6 hours.

This is very tasty. and VERY easy.

Here is an old one I have shared with my friends. It tastes like lasgna

Ovenight Meatball and pasta toss

Serves 6

Ingredients

1 (14 to 15 oz.) jar your favorite tomato pasta sauce
1 (1 0 ¾ oz.) can condensed Cheddar cheese soup
1 cup water
3 cups uncooked Extra Wide egg noodles
1 cup frozen vegetable mix such as green beans, onions, corn, and such, to equal 1 cup
1 18 ounce frozen cooked Italian meatballs
1 ½ cups shredded Mozzarella cheese
1 tablespoons chopped fresh or dried parsley



Directions

1. In ungreased 13 X 9 inch (3 quart) glass baking dish, combine pasta sauce, soup and water; mix well. Stir in uncooked noodles, and bell pepper and onion stir fry. Add meatballs; turn to coat with sauce. (Noodles should be completely covered with sauce.) Cover tightly with foil; refrigerate at least 8 hours or overnight.

2. When ready to bake, heat oven to 350 F. Bake casserole, covered, for 45 minutes.

3. Uncover baking dish; sprinkle with cheese and parsley. Bake, uncovered, an additional 5 to 10 minutes or until casserole is bubbly and cheese is melted

This one is Great for Leftover chicken such as a grilled or broiled chicken breast, or rotisserie chicken

Black Bean Garnachas
Serves 4
Ingredients

1 can diced tomatoes with garlic and onion
1 can black beans or pinto beans, drained
2 cloves garlic, minced
1 to 2 teaspoons minced jalapenos (optional)
½ teaspoon ground cumin
1 cup cubed grilled chicken
4 flour tortillas
½ cup shredded sharp cheddar cheese



Directions

1. Combine undrained tomatoes, beans, garlic, jalapeno peppers and cumin in large skillet. Cook over medium high heat 5 to 7 minutes or until thickened, stirring occasionally. Stir in chicken. Season with salt and pepper, if desired.

2. Arrange tortillas in single layer on grill over medium heat. Spread about ¾ cup chicken mixture over each tortilla. Top with cheese.

3. Cook about 3 minutes or until bottoms of tortillas are browned and cheese is melted. Top with shredded lettuce, diced avocado and sliced jalapeno peppers, if desired. Or fresh diced tomatoes.

Anglefood cake with Berry Sauce

Serves 4
Ingredients

1 (10-ounce) bag frozen blackberries, thawed or frozen
1 teaspoon cornstarch
½ prepared angel food cake, cut into 1-inch cubes (enough to make 4 cups)


Directions

1. In a small saucepan, combine blackberries and cornstarch. Bring to a simmer over medium heat. Simmer until blackberries break down, 2 to 5 minutes.
2. Transfer blackberries to a large bowl, add angel food cake cubes and toss to coat cake with sauce. Serve warm or chilled.

Creamy Beef and Potato Stew. It's morning and that sounds so good it makes me hungry now! These are cool recipes semigourmet.

thank you Grader999 if you try them let me know how you like them. I know I was pleasantly surprised that they were so tasty. The Creamy potato and beef stew is little salty for me but still pretty darned good. Hope you enjoy them. I know I will make them every now and then when I don't feel like cooking much.

Tuna and wild rice salad (this would be great for luch at work)

Servings 1-2
Ingredients

½ cup canned tuna (water packed)
2-3 tablespoons diced tomatoes
¼ cup cooked wild rice or wild rice blend
1 cup chopped lettuce
2-3 tablespoons vinaigrette dressing
Shredded cheese optional
Fresh ground black pepper





Directions

1. In a bowl mix drained and flaked tuna, cooked wild rice blend, and tomatoes; toss, in your bowl add lettuce, top with tuna mixture, and dress with your vinaigrette. Enjoy!

BLT breakfast squares

Serves 4-6

Ingredients

1 pound frozen loaf white bread dough, thawed (focaccia or a boboli)
2 tablespoons mayonnaise
2 teaspoons Dijon style mustard
¼ teaspoon freshly ground black pepper
1 ½ cups (4 to 5) Roma tomatoes, chopped
½ pound (about 8 slices) crispy cooked bacon, crumbled
6 ounces Monterey Jack Cheese, shredded
1/3 cup sliced green onions
1 cup shredded romaine lettuce



Directions

1. Heat oven to 400 F. Stretch or roll bread dough into greased 15 X 10 X 1 inch jelly roll pan. (If dough is difficult to stretch, cover with plastic food wrap and let rest 10 minutes, then continue stretching to fit into pan.)

2. Combine mayonnaise, mustard and pepper in small bowl. Spread evenly over dough. Combine tomatoes, bacon, ¾ cup cheese and green onions in medium bowl; toss lightly. Sprinkle over dough.

3. Bake for 20 to 25 minutes or until edges of crust are golden brown. Sprinkle with remaining cheese; continue baking just until cheese is melted (2 to 3 minutes). Immediately sprinkle with lettuce. Cut into squares. Serve warm.


Notes: I cooked 1 pound of bacon, used focaccia bread, and about 1 ½ cups chopped green onions, 2 cups diced Roma tomatoes, 2 cups finely shredded cheese, ½ cup mayo, and ¼ cup Dijon mustard. I baked this at 350 degrees until the cheese melted. After the cheese melted I removed it from the oven and sprinkled it with the lettuce, let it rest and cut it to eat. Very Filling.! I had leftover topping so we cooked it up the next day with Eggbeaters. Very tasty indeed.

Potato Casserole Supreme (I have not tried this one yet)

Serves 8

Ingredients

1 can (10.75 oz.) condensed cream of mushroom soup
1 can (10.75 oz.) condensed cream of chicken soup
1 container (8 oz.) sour cream
½ cup milk
¼ teaspoon pepper
1 package (30 oz.) frozen shredded hash brown potatoes
8 medium green onions, sliced (1/2 cup)
1 cup shredded Cheddar cheese (4 oz.)



Directions


1. Heat oven to 350 F. Spray 13x9 inch glass baking dish with cooking spray.

2. In a very large bowl, stir soups, sour cream, milk and pepper until well mixed. Stir in potatoes and onions. Spoon into baking dish.

3. Bake uncovered 30 minutes. Sprinkle with cheese. Bake uncovered 15 to 20 minutes longer or until golden brown on top and bubbly around edges.

Cod Vera Cruz (this is pretty good)

Serves 4

Ingredients

1 pound fresh or thawed frozen cod or haddock fillets
1 can (10 ¾ oz.) Campbell’s condensed tomato soup
1 can (10 ¾ oz.) Campbell’s condensed chicken broth
1/3 cup pace thick & chunky salsa or picante sauce
1 tablespoon lime juice
2 teaspoons chopped fresh cilantro, optional
1 teaspoon dried oregano, crushed
1/8 teaspoon garlic powder or 1 clove garlic, minced
4 cups cooked hot rice



Directions

1. Place fish in 2 quart shallow baking dish.

2. Mix soup, broth, salsa, lime juice, cilantro, oregano and garlic powder. Pour over fish. Bake at 400 F. For 20 minutes or until fish flakes easily with tested with a fork. Serve over rice.



Notes For single servings ¼ pound fish fillet, ½ can tomato soup, 5 ½ ounces chicken broth, 1/8 cup picante sauce, 1 teaspoon lime juice, a pinch of cilantro or you can omit this, 1 pinch dried oregano, dash of garlic powder, to taste, ½ cup cooked hot rice. (one cup is way too much)

Creamed Tuna On Toast

Serves 4-6

Ingredients

1 stick butter, ½ cup
1 can or large pouch tuna, water drained from can
½ cup flour
4 cups milk (you may need less milk, you may need more)
Salt and pepper to taste
10 to 12 slices white bread, Toasted



Directions

1. Melt butter in saucepan over medium heat. Add drained tuna stir to combine. Add flour, stir to incorporate and cook 2 minutes. Pour half of the milk in and stir to warm and thicken. Add more milk as needed to make the gravy the thickness you like.

2. To serve, place 2 slices bread on each plate. Either tear bread into bite size pieces or leave whole, what ever you prefer. Ladle the creamed tuna over bread on plates, and serve.

Creamy Chicken and Wild Rice

Serves 8

Ingredients

2 cans 10 ¾ ounces each Campbell’s cream of chicken soup
1 ½ cups water
1 package, 6 ounces, seasoned long grain and wild rice mix
4 large carrots, thickly sliced
8 boneless skinless chicken breast halves



Directions

1. Mix the soup, water, rice, and carrots in the crock pot slow cooker. Add chicken and turn to coat.

2. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours or until done.

Just tried a new recipe yesterday. It turned out pretty well. and is fairly cheap to make and Very easy.

Chicken in Sour Cream
Serves 4

Ingredients
8 chicken thighs
1 tablespoon vegetable oil
1 pinch ground black pepper
1 pinch salt
1 pinch paprika
1 (10.75 ounce) can condensed cream of mushroom soup
1 (1 ounce) package dry onion soup mix
1 cup sour cream
1 tablespoon lemon juice
1 teaspoon dried dill weed

Directions

Brown chicken in oil over medium heat. Place in a 9 x 13 inch greased baking dish. Sprinkle with salt, pepper, and paprika to taste.
Combine mushroom soup, onion soup mix, sour cream, lemon juice, and dill weed. Pour over chicken.
Bake at 350 degrees F (175 degrees C) for one hour, or until chicken is tender and sauce is brown.

In edit: I served this over Linguine

Also the reviews on this was Salty Salty Salty, so I left out the onion Soup mix, and added garlic powder, onion powder, pepper, dehydrated garlic, and dehydrated onion. and the other seasonings

Beef and Ale Ragout
Serves 4-6

Ingredients

1 tablespoon extra virgin olive oil
1 ½ pounds beef chuck roast, cut in ½ inch cubes
1 medium yellow onion, cut into ½ inch wedges
1 cup sliced carrots (about ¼ inch slices)
12 ounces beer, preferably ale
1 tablespoon tomato paste
1 tablespoon Italian Seasoning
2 teaspoons beef base
1 teaspoon Worcestershire sauce
2 tablespoons Kitchen bouquet
1 to 2 cups beef broth with 3 to 6 tablespoons flour whisked in
Salt and ground black pepper to taste




Directions

1. Coat a 3 ½ to 4 quart slow cooker with nonstick cooking spray.

2. In a large skillet over medium high heat, heat oil until hot. Add half of the beef; season with salt, pepper, onion powder, and garlic powder. Cook until browned, stirring frequently. Remove with slotted spoon; place in slow cooker. Repeat with remaining beef. Top beef in slow cooker with onions, and carrots.

3. Add beer, tomato paste, Italian seasoning, beef base, and Worcestershire sauce to skillet. Whisk until smooth, scraping skillet to remove any browned bits. Pour over beef and vegetables. Cover. Cook on high 4 hours or until beef is tender and mixture has thickened. Season with salt and pepper to taste. If it needs more broth and thickening mix the broth and flour bring back to a boil and stir in broth mixture. Serve over mashed potatoes, if desired.

Apple Cake (this is great for brunch and is wonderful with a cream cheese frosting)
Ingredients

1 can apple pie filling
2 cups sugar
2 cups flour
½ cup oil
2 tablespoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup nuts, optional



Directions

1. Combine all ingredients in bowl and mix. Pour into greased and floured 9x13 pan.
Bake at 325 degrees for 50 to 55 minutes
