Hi, I am new to cooking ribs and have had some luck making them fall off the bone ....in the crock pot but I find that they are way too tender and then I get these pieces of cartalige or something yucky in them As I cannot eat them right off the bone.

I sometimes just use a good BBQ sauce and then they are floating in sauce in the crock pot. Is that my problem should I put something in the bottom of the pot to have them not sitting in the sauce?

I need to cook them today and wanted to know how to avoid them being too tender.

Shela, If you like your ribs drenched in sauce, you can boil in water beer, onion, garlic and jalapeno(about 3-5 slices) for 15 mins this will remove a lot of fat. then transfer to baking dish, along with strained out onion, garlic, and jalapeno slices. Smother in KC Masterpiece or your favorite barbecue sauce. and bake in oven @ 300 - 325 for 1-3 hours depending on how tender you like your ribs. this works for the country ribs or racks.

If you don't have a smoker that you could rub the ribs down and smoke at low temp (200 degrees) then you could slow cook them on a grill over the lowest heat.

If you need to do them in the crock pot, then yes I would go with bastardchef's suggestion, or put them on a rack above the liquid, then brush them with sauce just about 15-30 minutes before removing from the crock pot. this will make the sauce sticky and adhere to the ribs more. This is probably a little late but my son makes the most fantastic ribs I've ever had. Usually spare ribs but he has made pork country ribs this way too and they're just great.
Place ribs in a roaster or large baking pan. Pour over all a bottle of oil and vinegar based Italian dressing, not creamy, or you can make your own. Cover and roast for about 2 1/2 hours at 300. Remove the ribs and place them on your bbq grill or indoor grill. Brush them generously with your favorite BBQ sauce and grill for about 2 minutes on each side just to carmelize the sauce. These will fall off the bone but still have texture and the taste is wonderful!

try this recipe. This recipe can be made on the grill or in the oven.

* 3 pork rib racks
* 1 (24 ounce) bottle of kc Masterpiece Original barbecue sauce
* 3 tablespoons brown sugar
* 2 tablespoons Emeril's Original Essence
* 1 tablespoon salt
* 1 tablespoon ground black pepper
* 1 tablespoon paprika
* 1 tablespoon cumin
* 1 tablespoon garlic powder
* 1 teaspoon cayenne pepper

Mix brown sugar, Emeril's Essence, salt, pepper, paprika, cumin, garlic and cayenne pepper thoroughly, and sprinkle on both sides of ribs to taste.

For grilling, carefully wrap in aluminum foil and cook bone side down approximately 1 1/2 hours on low temperature.

No need to turn.

After ribs become tender, remove from foil and continue cooking on both sides to desired crispness.

Apply BBQ sauce liberally to both sides and allow approximately 10 minutes for BBQ sauce to carmelize.

Brush a second time if desired, and allow to carmelize.

Remove from grill and enjoy!

*For oven baking, wrap in aluminum foil and place on a cookie sheet in a 275 degree oven for 4 hours.

Place a pan with water in the oven also to keep them moist.

Remove & discard foil and brush with BBQ sauce and allow 10 minutes to carmelize.
