View Full Version : Softened Potatoes for Cooking

I often found that when I want to use new potatoes in recipes eg, hotpots, frattatas, I need ready cooked ones.

I found a little cheat that will help cut down on the time so you won't need to wait while those potats are boling in a pan over the hob.

Place potatoes in a microvable bowl and fill up with water untill potatoes are covered
If you are using less than 5 potatoes, cook for about 5 minutes and then prob with a knife to see if they are soft enough.
If you are using more than 5 potatoes, cook for 10 minutes and then prod to see if soft enough.
If they are not soft enough cook for another five minutes, prod and if necessary repeat untill desired softeness.

I've been doing something similar with potatoes for baking. I microwave them for about 5 mins or more (depending on the time I have before everything else is ready). Then I pop them in the oven or grill. I haven't had a hard or rubbery tater since I started doing this.

I open a jar of my personally canned potatoes or if I'm desperate I will open a commercial can of new potatoes.
