meat 'n' two veg

Hi guys,this is my first post,so be gentle:
Last night,after a week's craving, I whipped up a small lemon meringue pie, (7inch ) using a very old,very simple recipe.It turned out perfectly.
The filling uses 1 cup of water, butter, sugar, yolk of one egg, lemon juice , pith, and cornflour.
Because I'm pre diabetic this is a real treat ,so I figure next time I'll make it rich.
Finally,to the point:I was thinking of substituting more egg yolks or even whole eggs for the cornflour.
I think it should work.Will it? How many egg yolks or whole eggs for 1 cup of water? I'm assuming the lemon juice would curdle milk if I tried that instead of water
